The Exeter celebrity chef says his regeneration of the Grade Two listed Courtlands House near Exmouth will be carried out sensitively.
East Devon District Council gave the go ahead for him to turn it into a luxury hotel and restaurant earlier this week.
The venue is set to open in 2017.
